Got no fresh herbs? Here I’ve made clever use of a Scotmid store cupboard staple, pairing mint with its favourite veg: peas. This dish is carb-free, low in fat and kind on the purse strings (serve with oven chips and salad and it’ll stretch to a family of four). Not only that but it tastes great!
